My menu thus far is:
Monday: Brown Rice with fried eggs, sweet potato with butter and cinnamon sprinkled on top.
Tuesday: Chicken stir fry – cauliflower, broccoli and a few other mixed veggies.

Here is a cute scrapkit, I thought would be nice to use for our homeschooling arts and crafts.

My 10 month old doesn’t take naps. He takes cat naps lasting about 20 minutes. I am at the end of my rope here. Any advice for getting a young one to sleep.
I am off to do my homework and see if I can improve his sleeping patterns.

My meal plan for today was.
I baked 6 chicken quarters. I took the meat off the bone of 3 of them. I sauteed the chicken meat with some garlic powder and onion powder. I also added a lil bit of Tony Chachri seasoning.
I steamed some broccoli, cauliflower, carrots and squash, sprinkled with a little bit of Ranch powder seasoning and brown rice.
The remaining chicken quarters are for tomorrows lunch for our family of four. I will prepare lunch for my husband to take to work. I will make the rest for my son and me.
I did take some rice, chicken and veggies and put them in the food processor for our 10 month old, I added a bit of water and he loves it.

I was planning on making broccoli and cheese casserole, sweet potatoes and small salad, but we had an unexpected long visit and all got put on hold. One of those nights sigh
I ended up cooking some hamburger patties on whole wheat toast with fixings. I baked french fries and we had juice (fruit). This was quick and easy so today’s original meal plan will probably be tomorrow’s dinner.
